Field of Greens lets students show culinary skills
Two dozen students from the Athens Technical College Culinary Arts program will apply their cooking skills this weekend at the annual Field of Greens in Walton County where the aspiring chefs will prepare 1,200 tastings showcasing the diverse bounty of area farmers.
Field of Greens will be held October 6 at Whippoorwill Hollow Organic Farm, 3905 Georgia Highway138 in Walnut Grove (Walton County) and is billed as a “festival celebrating local foods.” The event begins at 11 a.m. Sunday.
“The Field of Greens celebrates the farmers, chefs, and food producers who support local, sustainable food production,” said Chef Scott Howard, program chair for the Athens Technical College Culinary Arts program. “Proceeds from the event support programs that benefit those local products.”
For example, money raised by Field of Greens has gone to the Georgia Small Farms Disaster Relief Fund and to Slow Food Atlanta, a nonprofit established to counteract fast food trends and educate people about the importance of local food traditions.
Field of Greens includes an interactive children’s village, local music, craft demonstrations, a pig roast, and two enormous special culinary tents. One tent will host a chefs’ competition between 30 of Atlanta and Athens best farm-to-table chefs, while the other will feature the farmers’ tent that will highlight locally grown foods. The Athens Technical College Culinary Arts students expect to help with both culinary showcases. In the farmers’ tent, a dozen growers from Athens Farmers Market and the Monroe Farmers Market will provide a selection of products to create 12 unique dishes, and two students will be paired up with each farmer and dish to make 100 tastings for those attending. The farmers will be discussing the ingredients and what they grow. The students also will rotate every 45 minutes to help out in the chefs’ competition.
“Our team leader, student Liz Tanner, has been working with both the Athens & Monroe farmer vendors to partner up farmers and chefs with our students,” Chef Howard said. “This is a great opportunity for these students and the college.”
